Ingredientes:

– 4 pechugas de pollo
– 2 huevos
– 1 taza de harina
– 1/2 cucharadita de sal
– 1/2 cucharadita de pimienta
– 1/2 taza de aceite de oliva

Preparación:

1. Comience cortando las pechugas de pollo en trozos pequeños.

2. En un tazón, mezcle los huevos, la harina, la sal y la pimienta.

3. Agregue los trozos de pollo al tazón y mezcle bien para cubrir los trozos de pollo con la mezcla.

4. Caliente el aceite en una sartén a fuego medio-alto.

5. Agregue los trozos de pollo a la sartén y fríalos hasta que estén dorados y crujientes.

6. Retire los trozos de pollo de la sartén y colóquelos en un plato con papel absorbente para eliminar el exceso de aceite.

7. Sirva el pollo en pepitoria caliente.

Hello cooks and welcome to «Que Viva la Cocina» I´m Gorka Barredo and today we are gonna make a stew of the real ones. A grandma stew! We are going to make a chicken in pepitoria. The young people will tell… what is that «in pepitoria»? Let´s go for it!

To start, we are going to heat over high heat an oil jet. When it is hot, we add some chicken thighs. If you prefer, you can add an entire chicken. With its breasts included, if you choose. We are going to cook this chicken here for about a minute for each side.

After that time, we turn each thigh to cook the other side. Thus, we win two things: Chicken will be toasted for the outside and will be more pretty. And second, we seal the chicken and their juices keep better inside it. This done, we remove the thighs from the casserole.

And we reserve them for later. In this same oil, we add a garlic clove. We lower the heat to a medium. In this way, the garlic doesn´t burn. We add also a chopped onion. And now, we season. A pinch of salt and another indispensable of freshly ground black pepper.

And now, we are going to stir the ingredients for cook them. Over medium heat, remember it. The idea is sauté them in the oil for about 10 minutes. When this cook it, we are going to prepare the pepitoria. In another pan we are going to put an oil jet over high heat.

Then, we add some chopped almonds. You can chop them with a knife, in a mortar and pestle The almonds aren´t in big pieces. We stir-fry them for about a few seconds. Not too much, that this burns with the look.

And when they are toasted a little, we are going to add the indispensable ingredient in a good pepitoria. A yolk of a boiled egg. According to the RAE, pepitoria is a stew makes with poultry and a thick sauce what carries an egg yolk. The authentic pepitoria sauce was prepared with hen.

We mix all the ingredients and this introduce it in the garlic and onion stir-fry that we have prepared before. We are going to add a tbsp of flour too. This flour is going to give an interesant and thick touch to our sauce.

We stir and toast it. In this way flour loses it raw flavour. We cook it for about 2 minutes, no more. After that time, when we have an amalgam species, now you will see! We are gonna add a half glass of white wine. That is going to give a delicious touch.

But not only that. We mix all ingredients without remove them from the heat, and you can see how they are integrating. This spice of paste that we had before, it has already taken another texture and another color. And what is still left!

At the moment, we are gonna add the chicken thighs what we had reserved before. And now, we cover them with generous quantity of chicken broth. Many people ask me where do I get these broths, it’s very simple,

The carcass that I surplus of chickens that we eat at home, I keep them, I freeze them, and when I have enough of them I put them in a casserole. I cook them here with plenty of water and of this water I obtain a broth.

You can add some vegetables or spices of your choice. But well, we continue with this recipe. We mix again all the ingredients and we bring to the boil. We let to cook this for about 30 minutes more or less. It depend of the chicken, until it will be tender.
