La carne de cerdo en adobo es una deliciosa receta de la cocina mexicana que utiliza carne de cerdo marinada en una mezcla de especias y condimentos para crear un sabor picante y dulce. El adobo puede variar según la región de México, pero por lo general incluye ingredientes como chiles secos, ajo, vinagre, orégano, comino y canela. Para el sofrito o el adobo: 20 a 25 chiles puya se les conoce como GUAJILLO del que pica. Pero el GUAJILLO es más grande y no tan picoso. 3 a 4 chiles anchos. 3 ajos. 1 cebolla mediana Cuando ya se haya puesto a sofreír lo antes mencionado, se agregará unos 700 mililitros de agua y se dejará hervir por 10 minutos. La carne se dorará hasta que la costra se quede tostada y cambie de color lo único que se le pondrá es sal, pero si gustan pueden poner un poco de comino. Y ya cuando hayan puesto a dorar el sofrito con su manteca se le agrega un puño de orégano mexicano y se deje hervir por unos 30 minutos será suficiente para que espese y tome todo su sabor. Ingredientes:

– 1 kilogramo de carne de cerdo (preferiblemente lomo)
– 2 chiles anchos
– 2 chiles pasilla
– 1 chile guajillo
– 3 dientes de ajo
– 1/2 cebolla
– 1/2 taza de vinagre
– 1/4 taza de jugo de naranja
– 1 cucharada de comino
– 1 cucharada de orégano seco
– Sal y pimienta al gusto
– Aceite para cocinar

Preparación:

1. Primero, remojar los chiles en agua caliente durante 10 minutos para suavizarlos.

2. Mientras tanto, cortar la carne de cerdo en trozos de tamaño mediano. Salpimentar al gusto y reservar.

3. En una sartén caliente, tostar los dientes de ajo y la cebolla hasta que estén dorados.

4. En un procesador de alimentos, mezclar los chiles remojados (sin las semillas), el ajo tostado y la cebolla. Agregar el vinagre, el jugo de naranja, el comino, el orégano seco, y sal y pimienta al gusto. Procesar hasta que se forme una pasta homogénea.

5. Verter el adobo sobre la carne de cerdo y mezclar bien para que quede completamente cubierta. Dejar marinar en el refrigerador durante al menos 2 horas, pero preferiblemente durante toda la noche.

6. Calentar un poco de aceite en una sartén grande y cocinar la carne de cerdo hasta que esté completamente dorada y cocida por dentro (unos 10 a 15 minutos). Servir caliente con tortillas, arroz y frijoles. ¡Buen provecho!

Hello, hello friends! How are you guys? Today we’re going to be creating a delicious meal. We will be working with a versatile, flexible pork with bone. This type of pork includes the bone, which gives off a tasteful part to the meal. We will also create a tasty dressing for the pork.

You guys are going to enjoy the recipe, and how I make the chile. It is extremely delicious and easy to make. Today I am going to be using a Kilo(2 lb.) of pork. I have mixed in a variety of boney pork and pork bits without bone.

I’m also going to using Chile Pulla (or Puya) and Dried Poblano chiles(wide kind) This type of Chile is extremely delicious. It also darkens the color of the dressing we will be creating and sweetens the taste more. Using these specific type of chiles will enhance the taste of your meal.

I’m going to be using 1 onion, 3 pieces of Garlic, Oregano, Salt, and Lard. We will be using these to make the dressing. What you’re seeing here is the chile Pulla. I’m going to be using a big handful of this type of chile. I’m going to be using around 30 of these.

I will only be using 3-4 of the (wide)Dried Poblano chiles. However, this type of chile is spicy but it is very tasteful. We are going to start taking the seeds out of the chiles and cleaning them. Then later washing them under water. Then we will fry them after being cleaned.

We now have the chile cleaned and ready to be used. It is accompanied by the (peeled off) onions. The onions have to be medium or large sized. I have the Garlic pieces on the plate too. We will now begin to fry them in a pan.

I am going to start with the onions and the garlic pieces. Frying them will add more taste to the meal. Then I will take out the onions and garlic pieces and place them on a separate plate I am now adding the chiles to fry. After frying them for 3-4 minutes.

Then after 3-4 minutes of frying I added half a liter of water into the pan. I fried the chiles under water for about 10 minutes. (I added the Onions and pieces of garlic back in)

After this step we will make the dressing. We will put the products inside a blender to mix them well. After mixing it in a blender we will place it in a colander.

Now that we have all the products inside the blender to mix. We will add the left over water inside the blender as well. I’m only going to add half a tablespoon of salt into the blender because I’m going to also use mores salt onto the pork.

We are going to blend the Mixture well for about 3-4 minutes. That way the mixture can come out easy onto the colander and not in clumps and not waste any of the chile. Look at how the chile came out!

I really like the color of the chile and how well it came out here. After the chile marinates, it will taste even more delicious after adding the Oregano. Now on a ceramic pan we will put in the lard.

In my opinion, whenever you add lard to any meal it just makes the meal even more tasty. Now for this part we will have a colander over the ceramic pan and pour the Chile mixture inside. After working the Chile through the colander, we will let it sit here for about half an hour.

Then let the pan heat up to medium high on your stove. Then prepare for the Oregano. I assure you guys that the way that this recipe is going you will love it if you try it on your own! I recommend that you all try this recipe in this specific way.

Since there is so many steps to this recipe I don’t want you guys to feel overwhelmed by how many steps you have to go through. Since you have to cook the Chile and the Pork on a different pan separately, I hope that it won’t become much for you guys!

Now we will begin to crush the Oregano between our hands. Try to be careful in this step and make sure to take out the little sticks that come with the Oregano. After crushing the Oregano we will add it to the salsa. I only used a tablespoon of Oregano for this part.

We will this sit for 30 minutes on the stove We will now start on the pork. We will cook it at the same time as the Chile on another pan. For the seasoning I will only be using salt.

That is all the seasoning I will be doing because the Chile will add any extra flavor its missing. Plus, it already has Onions, Garlic, Chiles, and Oregano. Here is my secret on getting the pork cooked right.

Both the dressing and how you cook the pork will determine the overall taste of your meal. Obviously your meat shouldn’t come out burnt but the color of the meat is important. Make sure that the color that comes out is nice and golden. If you follow those steps, your meal will be tasty!

I recommend this recipe because it is so delicious! You can easily make this recipe for any party or gathering that you may have. Look at how well cooked the pork is. We will begin to add this to the Chile next!

The pork will now be cooked on the same pan as the Chile is right now. Now that we have everything mixed we will add the pork onto the Pan with Chile. This is going to come out tasty. I’m going to accompany this with some fried white rice.

My rice will have some corn on it. I’m also making beans to go on the side of my dish. Now that 30 minutes have passed you can tell how delicious the Pork and Chile look here. To tell you guys the truth the pork and the chile took about an hour to cook.

Because if you look at it this way, the Chile took 30 minutes to cook then the pork took another 30 minutes. that concludes around an hour. Ah! now you guys can see how chewy the Pork looks here! You guys are definitely going to enjoy how the pork is going to taste like!

Besides this recipe is good to make if you’re on a budget! Apart from the budget, you will get in return a tasteful meal. You guys can tell how delicious the pork looks from this view.

Like I said, this meal can be brought to any event and parties or even a stay at home meal. Even when you pair the meal with a combination of other things like beans or rice like I did here. Look at how delicious and pretty the rice came out looking!

We’re going to start setting up our plate now. This smells so good! I know you guys will enjoy how I cooked the meal! We will now serve the pork onto the plate. I’m just dying to try this meal! I really enjoy meals like this.

I really enjoy the pork that has bone in it! I’m gonna put in a little bit of rice here. Since I didn’t get enough Chile, I’m gonna add more after I added beans and rice as sides on the plate. Look at how that dressing looks! This meal looks so yummy!
