Ingredientes:

– 4 pechugas de pollo
– 1 cebolla grande
– 2 zanahorias
– 2 tomates maduros
– 1/2 taza de vino blanco
– 1/4 taza de aceite
– 1 cucharada de tomillo
– 2 dientes de ajo
– Sal y pimienta al gusto

Instrucciones:

1. En una olla grande, calienta el aceite a fuego medio.

2. Agrega la cebolla, zanahorias y ajo y sofríe por unos 3-4 minutos hasta que la cebolla esté transparente.

3. Agrega el pollo y cocina por unos 5 minutos hasta que esté dorado por los lados.

4. Agrega el tomate, tomillo, sal y pimienta al gusto. Cocina por unos 3 minutos.

5. Agrega el vino blanco y deja cocinar por unos 10 minutos.

6. Baja el fuego y deja cocinar por unos 20 minutos o hasta que el pollo esté bien cocido.

7. Sirve el Pollo Guisado caliente acompañado de arroz blanco o papas fritas.

Into the kitchen to say, «Wow, that smells so good.» Okay, to start, I’m heating one tablespoon of olive oil in this pot over medium heat. You can you corn oil, canola oil, or vegetable oil if you prefer. All are heart healthy options. Now, I’m going to add a teaspoon of sugar.

And continue to stir for about a minute, or until the sugar starts to brown. There we go. Now, it may seem odd that I’m adding sugar to a savory dish, but this will help caramelize the chicken. Caramelization is a food science term describing when sugar, whether it’s table sugar like this,

Or the natural sugars in fruits and vegetables, is cooked and begins to brown. it brings out amazing flavors in foods that you wouldn’t get without the heat. So now, I’ll put in my chicken. And I’ll use this to get it out. I have one pound of boneless, skinless chicken breast. You could also use chicken tenderloin if you prefer. So now it’s time for the rest of my ingredients. First, I have one cup of low-sodium chicken stock. We’re going to add that. I always look for the no salt added

Or low-sodium soups, stocks, and broths at the store. Next, the juice from one lemon. That’s about two to three teaspoons, depending on the size of the lemon. Next, I have one red bell pepper that I’ve cut into thin slices that goes in. Mmm, you can use any color, green, red, orange, yellow,

Whatever you like. Next, one small onion that’s been thinly sliced. I use yellow here, but just like the sweet pepper, you can use any color, white, yellow, red, all good choices. Now in goes one carrot that’s been sliced. And one medium potato that I diced into small cubes.

I like to leave the skin on my potato because there’s extra fiber and nutrients in the skin. I usually used red or Yukon gold potatoes for a dish like this. You could even use sweet potatoes or yams to add a little extra sweetness and color.

Okay, next I have two 15 and a half ounce cans of no-salt diced tomatoes. Canned tomatoes are another food that can contain a lot of sodium. So look for those low-sodium options. Okay, so I’ll put both cans in, including the liquid, which will help keep the chicken moist.

Now, in goes one teaspoon of minced garlic. That’s equal to one clove of minced garlic. Next, I have half a teaspoon of dried oregano. Or you could use dried cilantro if you’d prefer. And last, in goes one bay leaf. Just remember to remove that before serving.

While the essence of the bay leaf is lovely, it’s sharp and bitter if you bite into it. Now, I’m going to cover my pot. And let it simmer for about 30 minutes, which is enough time to have the chicken cook through and for all the ingredients to cook down

Into this lovely, terrific smelling and tasting sauce. So, my stewed chicken is now ready to serve. I’m serving it here with some rice, which is a very common lunch in the Dominican Republic. So, there you have it, Pollo Guisado. An international meal that you can easily make at home,
