Para preparar pollo agridulce chino en casa, comienza por cortar el pollo en cubitos y marinarlo en una mezcla de salsa de soja, vinagre, ajo y jengibre. Luego, fríe los cubitos de pollo en una sartén con aceite. Mientras se fríen, prepara la salsa mezclando salsa de soja, vinagre, azúcar, ajo y jengibre. Ingredientes:

-1 pollo entero, deshuesado y cortado en trozos
-2 cucharadas de salsa de soya
-2 cucharadas de vinagre de arroz
-2 cucharadas de azúcar
-2 cucharadas de jengibre fresco rallado
-2 cucharadas de aceite de ajonjolí
-1 cucharada de ajo en polvo
-1/2 taza de salsa de tomate
-1/2 taza de agua
-1/4 taza de piña en trozos
-1/4 taza de pasas
-1/4 taza de cebollas en trozos

Instrucciones:

1. En un recipiente grande, mezcle la salsa de soya, el vinagre de arroz, el azúcar, el jengibre rallado, el aceite de ajonjolí y el ajo en polvo.

2. Agregue el pollo y mezcle hasta que esté bien cubierto con la mezcla. Deje reposar durante 15 minutos.

3. En una sartén grande a fuego medio, agregue el pollo y cocine hasta que esté dorado.

4. Agregue la salsa de tomate, el agua, la piña, las pasas y las cebollas.

5. Baje el fuego y deje cocinar a fuego lento durante 15-20 minutos, hasta que el pollo esté cocido.

6. Sirva caliente con arroz blanco o fideos de arroz.

Hello cooks and welcome to «Que Viva la Cocina! I´m Gorka Barredo and today we are going to make a sweet and sour chicken as in the chinese restaurants! It´s very easy to prepare. First of all, we are gonna to put an egg into a bowl. If some eggshell fall inside, pull out it.

Now, we are gonna to beat the egg with a holder. It´s not necessary to beat in excess, just unify the egg-white with the egg yolk. Here, we are going to add other ingredients and in this way, they will join with the egg. We put some chicken breasts previously diced.

This pieces should be smaller than the size of a bite. We put a pinch of salt. And now, we add the rest of ingredients. We put a teaspoon of soy sauce, and another teaspoon of rice vinegar.

If you don´t have this, you can replace it for white wine vinegar although this isn´t very oriental. But it isn´t very important, The most important is that you make this recipe in home… Without excuses! Mix all ingredients until chicken impregnate well of this mixture. and then, we cover all with cornstarch.

In this way, we coat the chicken with it. You can make it handcraft in a separate dish, but cornstarch is a very thin flour, and make it by hand, coat each one of the piece of chicken is very cumbersome. We are gonna to dirty all! Do it the way that you prefer.

In my case, I pour the cornstarch directly over the mixture and mix all with a spoon. Then, place the bowl into the freezer and let to rest for about 10 minutes while we´re gonna to prepare the sauce.

We are gonna to continue adding more ingredients. Add some tablespoon of soy sauce. And now, we add the ingredients which will transform our sauce in sweet and sour sauce. We add some tablespoon of rice vinegar. As before, if you don´t have it, you use white wine vinegar. And a tablespoon of brown sugar.

After that, we cook all over medium heat while we stir all frequently. We are gonna to want is cook all ingredients and reduce the sauce. In this way, we will obtain concentration of flavours. When the sauce is a few thick, we retire it from the heat…

…and reserve it, because after, we will use it. In a casserole with plenty of oil we are fry the chicken breast that they will have already rested in the freezer. In this way, with the cold we will obtain the mass settle over the chicken.

We fry the breasts in little batches so the oil doesn´t do cool. we fry it over 180ºC/ 356ºF. Past for about 2 or 3 minutes, the chicken breasts are browned and cooked. Then, retire them from the oil and put them over paper towel.

Add the onion previously cut in big pieces (similar to pieces of the chicken), a red pepper previously cut in big pieces too. and also chopped green pepper in big pieces The same amount of red pepper as of green pepper.

Finally, put a little pinch of salt. We don´t want the vegetables release its juices. The vegetables will have to stay «al dente» for this, we are going to cook them for about 3 minutes stirring frequently. Cook them over high heat without let stirring.

3 minutes later, all the vegetables will still be some hard. This is we are want. Now, add the sweet and sour sauce. We stir all for mix all the ingredients. In this way, sauce will be integrate well with the vegetables. Stir a little is sufficient.

And now, add a teaspoon of cornstarch previously dissolved in water. This, will thicken our sauce and it will give an interest flavor. We let to cook all for about 2 minutes while stirring frequently. In this way, our sauce will thicken. Now, we add the fry chicken.
