How To Make Gluten Free Vegan Alfajores with Vegan Dulce de Leche

Los alfajores son unos deliciosos dulces tradicionales de América Latina, especialmente populares en Argentina y Uruguay. Generalmente se hacen con dos galletas suaves y mantecosas unidas por un dulce de leche cremoso.

Sin embargo, si eres vegano o tienes intolerancia al gluten, puede resultar un desafío encontrar alfajores que se ajusten a tu dieta. Pero no te preocupes, porque te enseñaré cómo hacer unos deliciosos y saludables alfajores sin gluten y veganos.

Para empezar, necesitarás los siguientes ingredientes:

– 2 tazas de harina de avena sin gluten
– 1/2 taza de aceite de coco derretido
– 1/2 taza de azúcar de coco
– 1 cucharadita de esencia de vainilla
– 1/4 cucharadita de sal
– 1/2 taza de almendras molidas

Para el dulce de leche vegano, necesitarás:

– 1 lata de leche de coco sin azúcar
– 1/2 taza de azúcar de coco
– 1 cucharadita de esencia de vainilla

Ahora, vamos a preparar los alfajores:

1. En un tazón grande, mezcla la harina de avena sin gluten, el aceite de coco derretido, el azúcar de coco, la esencia de vainilla, la sal y las almendras molidas. Amasa hasta obtener una masa suave y homogénea.
2. Envuelve la masa en papel film y refrigérala durante al menos 30 minutos.
3. Precalienta el horno a 180°C.
4. Saca la masa del refrigerador y estírala suavemente sobre una superficie ligeramente enharinada. Usa un cortador redondo para hacer las galletas del tamaño deseado.
5. Coloca las galletas en una bandeja para hornear cubierta con papel de horno y hornea durante 12-15 minutos, o hasta que estén doradas.
6. Retira las galletas del horno y déjalas enfriar completamente.

Ahora, vamos a preparar el dulce de leche vegano:

1. En una cacerola pequeña, mezcla la leche de coco, el azúcar de coco y la esencia de vainilla.
2. Cocina a fuego medio-bajo, revolviendo constantemente, hasta que la mezcla espese y adquiera una consistencia similar a la del dulce de leche. Esto puede tomar alrededor de 1 hora.
3. Retira la cacerola del fuego y deja que el dulce de leche vegano se enfríe.

Una vez que las galletas y el dulce de leche vegano estén fríos, es hora de armar los alfajores:

1. Unta una cucharada de dulce de leche vegano en una galleta y coloca otra galleta encima para hacer un sándwich.
2. Repite este proceso con el resto de las galletas.
3. Si lo deseas, puedes espolvorear un poco de azúcar en polvo sobre los alfajores terminados para decorar.
4. ¡Listo! Ahora puedes disfrutar de tus deliciosos alfajores veganos sin gluten con dulce de leche vegano.

Today’s recipe is easy to make and truly brings me back to my childhood, we are making gluten free vegan alfajores and vegan dulce de leche. For those who have never heard of alfajores, these sweet lemon or vanilla cookies have a milk candy filling or known as dulce de leche, traditionally they are from Argentina. However, Latin American countries have adopted this beloved Argentinian pastry and can now be found in most bakeries around the region.

THE CONDENSED MILK I USED IS COCONUT MILK BASED: this is the one I used, but it’s cheaper to buy it in supermarkets rather than online as it’s triple the price!

Ingredientes:

Para los alfajores:
– 1 taza de harina sin gluten
– 1/4 taza de almendras molidas
– 1/4 taza de azúcar de coco
– 1/4 taza de aceite de coco
– 2 cucharadas de leche vegetal (como leche de almendra o de arroz)
– 1 cucharadita de esencia de vainilla
– 1/4 cucharadita de sal

Para el dulce de leche vegano:
– 1 lata de leche de coco refrigerada durante la noche
– 1/2 taza de azúcar de coco
– 1 cucharadita de esencia de vainilla

Preparación:

1. Comienza preparando el dulce de leche vegano. Abre la lata de leche de coco y separa la parte sólida de la líquida. Desecha la parte líquida.

2. En una olla pequeña, agrega la parte sólida de la leche de coco y caliéntala a fuego medio-bajo. Luego, agrega el azúcar de coco y la esencia de vainilla.

3. Cocina la mezcla a fuego medio-bajo durante aproximadamente 20-25 minutos, revolviendo constantemente con una cuchara de madera. El dulce de leche estará listo cuando alcance una consistencia espesa similar a la miel.

4. Una vez listo, retira la olla del fuego y deja enfriar completamente.

5. Mientras el dulce de leche se enfría, precalienta el horno a 180°C (350°F) y forra una bandeja para hornear con papel de horno.

6. En un tazón grande, mezcla la harina sin gluten, las almendras molidas, el azúcar de coco y la sal. Agrega el aceite de coco, la leche vegetal y la esencia de vainilla. Mezcla bien hasta obtener una masa suave.

7. En una superficie enharinada, extiende la masa con un rodillo hasta que tenga aproximadamente 1/4 de pulgada de grosor.

8. Con un cortador de galletas redondo, corta la masa en círculos del tamaño deseado para los alfajores.

9. Coloca los círculos de masa en la bandeja para hornear preparada y hornea durante 10-12 minutos o hasta que estén ligeramente dorados.

10. Retira los alfajores del horno y deja enfriar completamente.

11. Una vez que los alfajores estén fríos, toma una cucharadita de dulce de leche vegano y colócala en el centro de la mitad de los alfajores.

12. Cubre los alfajores rellenos con otra galleta y presiona suavemente para que el dulce de leche se esparza por los bordes.

13. Repite este proceso hasta que todos los alfajores estén rellenos.
