Ingredientes:
• 1 pollo cortado en 8 trozos
• 1 cebolla grande, picada
• 2 dientes de ajo, picados
• 2 tomates maduros, picados
• 2 cucharadas de aceite de oliva
• 2 cucharadas de manteca
• ½ taza de vino blanco
• 2 tazas de caldo de pollo
• 1 cucharada de perejil picado
• 1 cucharadita de sal
• 1 cucharadita de pimienta negra
• 1 cucharadita de comino
• 1 cucharadita de orégano
• 1 cucharadita de azafrán
• ½ taza de aceitunas negras, sin hueso
• ½ taza de alcaparras
• 2 zanahorias, cortadas en rodajas
• 1 taza de champiñones, cortados en láminas
• ½ taza de pasas
• 2 patatas, cortadas en trozos
• 2 cucharadas de harina
• ½ taza de nueces picadas
• 1 cucharada de mantequilla
Instrucciones:
1. Calienta el aceite y la manteca en una cazuela grande a fuego medio-alto.
2. Añade el pollo y cocina hasta que esté dorado por ambos lados.
3. Agrega la cebolla, el ajo, el tomate, el vino blanco, el caldo de pollo, el perejil, la sal, la pimienta, el comino, el orégano y el azafrán.
4. Baja el fuego y deja que se cocine a fuego lento durante unos 45 minutos.
5. Añade las aceitunas, las alcaparras, las zanahorias, los champiñones, las pasas, las patatas, la harina, las nueces y la mantequilla.
6. Cocina a fuego lento durante otros 30 minutos.
7. Sirve caliente.
